I was gonna make a tomato sandwich with ricotta (because mayo is trash; fight me), but then I got stir crazy from the weather and made fancy toast instead. Diced and salted the heirlooms to extract enough liquid for a tomato vinaigrette, then topped with lemon zest, salt and pepper, and whatever herbs were left in the fridge.
