“Beauregard’s Castle,” built on the edge of Lake Borgne but long since swallowed by it. The fort was built in the 1800s to help protect New Orleans from further attacks by the British Army, but never garrisoned due to the advancements in artillery that came out of the Civil War. Celebrating six months in NOLA with my first gumbo of the season: turkey (TDay leftovers), local duck sausage and collards in a turkey stock.
